How To Cook Nigerian Coconut Rice At Home

How To Cook Nigerian Coconut Rice At Home

Ingredients
  • Parboiled rice (4 Cups) 
  • 500mls Tomato Stew
  • 600 mls Coconut Milk / 1 big ball of coconut 
  • Chicken 
  • Vegetable oil
  • Chilli pepper (to taste)
  • Salt (to taste)
  • 1 medium sized onions
  • 3 stock cubes
  • Spice (curry, thyme, beef seasoning)
  • Clean and Fresh water

  • Grater / Blender
  • Sieve
  • Medium sized bowl

Quick Steps On How To Cook Coconut Rice 

  • 1. Set at side an already prepared tomato stew,it should be put on standby. 
  • 2. Wash and prepare your chicken,that is if it's chicken that you want to use. Cut the chicken into pieces,add the chopped onions, stock cubes and thyme,then start cooking. You should cook till the chicken is soft and done,add salt to taste. 
  • 3. Sieve the chicken,then fry with vegetable oil,this way your chicken will be ready and on standby. 
  • 4. Go ahead and grate the coconut, pour the shredded pieces in a bowl.Then pour lukewarm water on the shredded pieces and leave for about an hour,after which the water will turn milky.Pour the whole content into a sieve,make sure that you squeeze the coconut shaft to get out as much coconut milk as possible. After doing this,set the milky coconut water aside.

  • 5. The next step is for you to parboil the rice,wash the parboiled rice and set aside.
  • 6. Pour the chicken stock,the coconut milk and the tomato stew into your pot. Once the content start to boil,go ahead and add the drained parboiled rice, salt and pepper to taste. 
  • 7. Watch carefully and don't hesitate to add more water if necessary to ensure that your coconut rice is well cooked.
  • 8. Cover the pot of rice and cook for 20 - 30 minutes,keep on checking to know when the rice will be done by checking the water level and tasting it. 
  • 9. After some minutes your coconut rice will be ready.
