How To Cook Nigerian Vegetable Soup


In this post we shall quickly take a look at how you can easily cook a well garnished Nigerian vegetable soup with ugwu leaf. 
Vegetable soups is a very common delicacy that is spread across different cultures in Nigeria. 

Vegetables soups are prepared using almost the same procedure but are given different names by different tribes in Nigeria.

Now let's quickly take a look at how you can easily cook a vegetable soup (Edikaikong soup) at home. 

How To Cook Nigerian Vegetable Soup

Ingredients
  • 2-3 onion bulbs
  • 500g dried fish
  • 1 cup of grounded crayfish
  • 1 cup of palm oil
  • 6 cups of ugwu leaf
  • Chicken/Beef/fish
  • 2 spoons of ofor
  • 12 cups of waterleaf
  • Salt 
  • Pepper
  • 1 cup of periwinkle
  • Stock fish head (medium size)

Tools*
  • Chopping board
  • Cooking pot
  • 2 Medium Sized Bowl
  • Kitchen knife
  • Sieve

Quick Preparation Method

  • (a) Start off by washing and cutting the meat,then go ahead to parboil the meat,to do this,add water to the meat,slice and add onions,seasoning cubes and other spices,cook the meat till it is soft and ready for consumption,then set aside,you can use a pressure cooker in other to save time and gas. 
  • (b) Prepare your stock fish by washing and removing sand and other particles. 
  • (c) Slice your ugwu and waterleaf vegetables,put the vegetables in two separate bowls.Then boil hot water and pour into the leaves,leave for 5 minutes,then sieve out the vegetable leafs from the hot water,this will make sure that your leafs are free from sand.

  • (d) Put your meat into a pot,add water and allow to boil,afterwards add one cup of palm oil to the boiling meat on fire,then add salt and pepper to taste.
  • (e) Cook for about 7 - 10 minutes,also check and the level of water in the pot,it must have reduced by now,go ahead and add periwinkles,grinded crayfish and ofor,then stir and allow to cook for 5 minutes. 
  • (f) Go ahead and add the water leaf, stir very well,allow to cook for 3 minutes, then add your ugwu leaf and stir,allow it to simmer for 3 minutes.
  • (g) Turn off the heat from the gas and allow your soup to cool off.

And there you go,your vegetable or Edikaikong soup is ready to be served,it's quite easy right?

From the name of the soup "Edikaikong",i know you probably taught that it would be a very long and complicated dish with a lot of advanced steps and processes. 

You can serve your vegetable soup with Eba, Wheat, Semo, Pounded yam or Fufu.

Quick Tip: 
  • Do not overcook your vegetables as it will become soft and will subsequently lose its nutritional value.
